I wish I would have known this a bunch of official digital documents I had to add my signature to earlier: Digitally Insert Signatures into Documents using Preview.

Note: There is no Signature item in the Annotate menu of “my” Preview.app – but you can open any other (I use Highlight Text) and then use the calligraphic and underlined S icon.
